When building U-Boot we select the architecture via Kconfig and not ARCH
being passed in via the environment or make cmdline.

The OP-TEE binary to use is renamed to v2 as the v1 binary has been
deprecated and is no longer built by default.

Update the same in AM65x and J721e README.
