enable error reporting from enable_vt_processing (#8373)

This PR tweaks the enable_vt_processing() function with more verbose
error handling. This is related to #8344.

# Tests + Formatting

- `cargo fmt --all -- --check` to check standard code formatting (`cargo

- `cargo clippy --workspace -- -D warnings -D clippy::unwrap_used -A
clippy::needless_collect` to check that you're using the standard code
style
- `cargo test --workspace` to check that all tests pass
